In a 1l Consol jar whisk together 2 tbsp balasamic vinegar, 1 tsp Dijon mustard and a pinch of salt and black pepper. In layers, add ¼ cucumber, chopped, 1 cup baby spinach, chopped, 90g tuna in water, drained, ½ medium red pepper, chopped, and ¼ avocado, chopped. Screw on lid and shake jar to distribute dressing. (1 630kJ).
