Slice ½ an avocado into 2 pieces. Wrap each slice with a piece of smoked salmon. Sprinkle with grated red onion and fresh lemon juice, drizzle with extra-virgin olive oil and season to taste with salt and pepper. Serve with 1 cup sweet melon cubes, garnished with a squeeze of lime juice or lime zest.
