Smoked-salmon Avocado Wraps & Melon Salad

Recipe Ingredients

  • ½ an avocado
  • smoked salmon (2 pieces total)
  • grated red onion
  • fresh lemon juice
  • extra-virgin olive oil
  • salt and pepper
  • 1 cup sweet melon cubes
  • lime juice or lime zest

Recipe Directions

Slice ½ an avocado into 2 pieces. Wrap each slice with a piece of smoked salmon (2 pieces total). Sprinkle with grated red onion and a squeeze of fresh lemon juice, drizzle with extra-virgin olive oil and season with salt and pepper to taste. Serve with 1 cup sweet melon cubes, garnished with a squeeze of lime juice or lime zest.
