Smoky Peanut & Chicken Tacos

Recipe Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup water
  • 1 tbsp melted butter
  • 2 cloves garlic
  • 1 chipotle chilli
  • 3 tbsp adobo sauce
  • 1/2 tsp salt
  • 450g skinless, boneless chicken breasts
  • 1 tbsp lime juice

Recipe Directions

  1. Purée 1/2 cup peanut butter, 1/4 cup water, 1 tbsp melted butter, 2 cloves garlic, 1 chipotle chilli in adobo sauce plus 3 tbsp adobo sauce and 1/2 tsp salt, until smooth. Pour into a medium-sized baking dish and add 450g skinless, boneless chicken breasts, turning to coat.
  2. Cover with foil and bake at 200°C for 30 minutes or until chicken is cooked. Slice chicken, then drizzle with 1 tbsp lime juice. Serve with tortillas, coriander and red cabbage.
