- 450gfrozen potato puffs, potato rösti or pommes croquettes
- 230g mixed mushrooms
- 1/2 cup roasted red peppers
- 1 medium onion
- 1 1/2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1 egg
- Toss 450g frozen potato puffs, potato rösti or pommes croquettes with 230g mixed mushrooms, thinly sliced; 1/2 cup roasted red peppers, drained and chopped; 1 medium onion, finely chopped; 1 1/2 tbsp olive oil; 1/2 tsp smoked paprika and 1/4 tsp salt.
- Arrange in a single layer on 2 large rimmed baking sheets. Bake at 220°C for 25 minutes, rotating pans on oven racks halfway through.
