Recipe Ingredients

  • 450gfrozen potato puffs, potato rösti or pommes croquettes
  • 230g mixed mushrooms
  • 1/2 cup roasted red peppers
  • 1 medium onion
  • 1 1/2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1 egg

Recipe Directions

  1. Toss 450g frozen potato puffs, potato rösti or pommes croquettes with 230g mixed mushrooms, thinly sliced; 1/2 cup roasted red peppers, drained and chopped; 1 medium onion, finely chopped; 1 1/2 tbsp olive oil; 1/2 tsp smoked paprika and 1/4 tsp salt.
  2. Arrange in a single layer on 2 large rimmed baking sheets. Bake at 220°C for 25 minutes, rotating pans on oven racks halfway through.
Serve topped with a fried egg.

EACH SERVING WITH AN EGG: About 1 490kJ, 10g protein, 34g carbohydrate, 21g fat (4g saturated), 4g fibre, 760mg sodium.

EGG-CELLENT TIP For perfect sunny-side-up eggs, cook over a medium heat, covering the frying pan with a lid to capture steam.
