Soya-braised Beef & Tomato-mint Salad

Recipe Ingredients

  • 1,4 kg beef brisket
  • 5 cloves garlic
  • ¼ cup brown sugar
  • ¼ cup rice vinegar
  • ¼ cup soya sauce
  • 3 tbsp fish sauce
  • ½ tsp pepper
  • 1 punnet Romma tomatoes
  • 1 small red onion
  • ½ cup mint leaves
  • jasmine rice

Recipe Directions

  1. In a 7 to 7,5 slow-cooker bowl, combine 1,4kg beef brisket, trimmed of excess fat and cut into 2,5cm chunks; 5 cloves garlic, chopped; ¼ cup brown sugar; ¼ cup rice vinegar; ¼ cup soya sauce; 3 tbsp fish sauce; and ½ tsp pepper.
  2. Cook on low for 6 to 8 hours or until tender; toss with 1 punnet Roma tomatoes, cut into halves; 1 small red onion, thinly sliced; and ½ cup mint leaves. Serve with steamed jasmine rice.
EACH SERVING About 1 220kJ, 42g protein, 9g carbohydrate, 10g fat (4g saturated), 2g fibre, 510mg sodium.
