- 1,1kg assorted small chicken parts (cut breasts in half)
- 450g mini sweet peppers
- 1/2 tbsp oil
- 1/2 tsp each salt
- 1/2 pepper
- 1/2 cup light mayonnaise
- 1 clove garlic
- 1/2 tsp smoked paprika
- Toss 1,1kg assorted small chicken parts (cut breasts in half) and 450g mini sweet peppers with 1,5 tbsp oil and 1/2 tsp each salt and pepper. Arrange on a baking tray.
- Roast for 35 minutes or until chicken is cooked.
- Stir together 1/2 cup light mayonnaise, 1 clove garlic, crushed, and 1/2 tsp smoked paprika. Serve chicken and peppers with garlic mayonnaise and a sliced baguette.
