Spanish Chicken & Peppers

Recipe Ingredients

  • 1,1kg assorted small chicken parts (cut breasts in half)
  • 450g mini sweet peppers
  • 1/2 tbsp oil
  • 1/2 tsp each salt
  • 1/2 pepper
  • 1/2 cup light mayonnaise
  • 1 clove garlic
  • 1/2 tsp smoked paprika

Recipe Directions

  1. Toss 1,1kg assorted small chicken parts (cut breasts in half) and 450g mini sweet peppers with 1,5 tbsp oil and 1/2 tsp each salt and pepper. Arrange on a baking tray.
  2. Roast for 35 minutes or until chicken is cooked.
  3. Stir together 1/2 cup light mayonnaise, 1 clove garlic, crushed, and 1/2 tsp smoked paprika. Serve chicken and peppers with garlic mayonnaise and a sliced baguette.

EACH SERVING About 2 100kJ, 38g protein, 10g carbohydrate, 34g fat (7g saturated), 2g fibre.
