Spicy Bánh Mì Sandwiches

Recipe Ingredients

  • 1 Roasted Jerk Chicken
  • 1 cup mayonnaise
  • 6 sandwich rolls, split and
  • lightly toasted
  • 1 cucumber, thinly sliced
  • 3/4 cup grated carrots
  • 1/2 cup fresh coriander leaves
  • Sriracha, to taste

Recipe Directions

Cut meat from chicken, discarding skin and bones, and cut into thin slices. Spread mayonnaise on rolls and top with chicken, cucumber, carrots and coriander. Drizzle with Sriracha, if desired.

EACH SERVING About 2 555kJ, 34g protein, 25g carbohydrate, 41g fat (7g saturated), 2g fibre, 680mg sodium.
