- 4 salmon fillets (170g each)
- 1 tbsp hoisin sauce
- ⅛ tsp crushed chilli flakes
- 700g cauliflower florets
- 1 tbsp oil
- 1/4 tsp salt
- 1/4 cup chopped peanuts
- Chopped coriander
- Place 4 salmon fillets (170g each) in the centres of 4 foil sheets. Brush each with 1 tbsp hoisin sauce and sprinkle each with ⅛ tsp crushed chilli flakes. Toss 700g cauliflower florets with 1 tbsp oil and 1/4 tsp salt, and arrange around each fillet.
- Seal packets and cook for 15 minutes or until cauliflower is tender. Garnish with 1/4 cup chopped peanuts and chopped coriander.
EACH SERVING: About 1 700kJ, 43g protein, 18g carbohydrate, 19g fat (3g saturated), 5g fibre.
