Spinach-artichoke Pizza

Recipe Ingredients

  • 1 loaf soft French or Italian bread about 340g; we used ciabatta)
  • 2 tbsp olive oil
  • 1¼ cups grated Slimmer’s Choice low-fat mozzarella cheese
  • 280g frozen chopped spinach, thawed and squeezed dry
  • 220g low-fat cream cheese, softened
  • ⅓ cup fat-free Greek yoghurt or light sour cream
  • ⅓ cup grated Parmesan cheese
  • 2 cloves garlic, crushed
  • ¼ tsp each salt and pepper
  • 400g canned artichokes, patted dry and chopped
  • 1 lemon
  • snipped chives, for garnish

Recipe Directions

1. Preheat oven to 200°C. Cut bread in half lengthwise, then cut each piece in half across. With hands, press bread to flatten. Line a large baking tray with foil.

2. Arrange bread, cut-sides up, on the prepared baking tray. Brush with oil and sprinkle with 1 cup mozzarella. Bake for 5 to 7 minutes or until cheese melts.

3. In a large bowl, stir together spinach, cream cheese, yoghurt, Parmesan, garlic and ¼ tsp each salt and pepper until combined. Divide mixture among pieces of bread. Top with artichokes and remaining ¼ cup mozzarella. Bake for 12 to 18 minutes or until golden brown.

4. Grate peel of half of lemon over pizzas. Garnish with chives.

 

EACH SERVING About 2 700kJ, 32g protein, 61g carbohydrate, 31g total fat (14g saturated), 6g fibre, 67mg cholesterol.

To make Cheeseburger Pizza

1. Preheat oven to 200°C. Cut bread in half lengthwise, then cut each piece in half across. With hands, press bread to flatten. Line a large baking tray with foil.

2. Arrange bread, cut-sides up, on the prepared baking tray. Brush with oil and sprinkle with 1 cup mozzarella. Bake for 5 to 7 minutes or until cheese melts.

3. Spread 1 cup Napolitana sauce on bread. Divide 220g ground extralean beef mince among pieces of bread, distributing evenly. Sprinkle with ¼ tsp each salt and pepper.

4. Top with ¾ cup grated Cheddar cheese. In a small bowl, toss ½ small red onion, finely chopped, with 1 tsp oil. Sprinkle onion on pizzas.

5. Bake for about 10 minutes or until onion is tender and meat is fully cooked through.

 

EACH SERVING About 2 595kJ, 35g protein, 55g carbohydrate, 29g total fat (12g saturated), 3g fibre, 76mg cholesterol.

To make Ham & Cheese Pizza

1. Preheat oven to 200°C. Cut bread in half lengthwise, then cut each piece in half across. With hands, press bread to flatten. Line a large baking tray with foil.

2. Arrange bread, cut-sides up, on the prepared baking tray. Brush with oil and sprinkle with 1 cup mozzarella. Bake for 5 to 7 minutes or until cheese melts.

3. In a small bowl, stir together 3 tbsp Dijon mustard, 3 tbsp apricot jam and ¼ tsp pepper. Divide mixture among pieces of bread, spreading evenly.

4. Top with 170g thinly sliced deli ham and 1 small Granny Smith apple, cored and thinly sliced. Sprinkle pizzas with ¾ cup grated Gruyère cheese and 2 tsp chopped fresh rosemary leaves.

5. Bake for 10 to 15 minutes or until golden brown.

 

EACH SERVING About 2 470kJ, 31g protein, 66g carbohydrate, 22g total fat (8g saturated), 3g fibre, 60mg cholesterol.
