Recipe Ingredients

  • 1 tbsp olive oil
  • 2 (2,5cm-thick) boneless top sirloin beef steaks (680g)
  • ¼ tsp salt
  • 1 medium red pepper
  • 1 medium onion
  • 400g canned chopped tomatoes
  • ⅛ tsp salt

Recipe Directions

In a 30cm frying pan, heat 1 tbsp olive oil on high. Season 2 (2,5cm-thick) boneless top sirloin beef steaks (680g), trimmed, with ¼ tsp salt. Cook steaks for 3 minutes per side or until browned; transfer to a plate. Reduce heat to medium. Into the frying pan, stir 1 medium red pepper, very thinly sliced, 1 medium onion, thinly sliced, 400g canned chopped tomatoes and ⅛ tsp salt. Cover; cook for 5 minutes. Return steaks to pan. Cook, uncovered, for 3 to 5 minutes for medium-rare, or as desired. Slice steaks; serve over lightly dressed greens. 
EACH SERVING About 1 840kJ, 39g protein, 13g carbohydrate, 26g fat (7g saturated), 3g fibre, 650mg sodium.
