Sugar-free Carrot Cake

Recipe Ingredients

Cake

  • 1 ½ cups sunflower oil
  • 1 cup agave syrup (or honey)
  • 2 eggs
  • 2 cups grated carrots
  • ½ cup raisins
  • ½ cup chopped walnuts
  • juice of 1 large orange
  • 2 tsp vanilla essence
  • 1 cup cake flour
  • 1 cup whole-wheat flour
  • 2 tsp bicarbonate of soda
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • dash of nutmeg
  • ½ tsp ground ginger

Icing

  • 1 ½ cups cashew nuts
  • ½ cup water
  • 3 tbsp coconut oil
  • 2 tbsp honey
  • ¼ tsp sea salt

Recipe Directions

1. Preheat oven to 175°C. Cream the oil and agave syrup in a large bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.

2. In a second bowl, mix the carrots, raisins, walnuts, orange juice and vanilla essence.

3. Sift the flours, baking powder, cinnamon and nutmeg into a third bowl, and

add the ginger.

4. Stir the flour mixture and carrot mixture into the oil mixture

until combined.

5. Pour into a medium cake tin and bake for 40 to 50 minutes.

6. To make the icing, place the icing ingredients in a high-speed blender and blend until smooth.

7. Leave the icing in the fridge while you bake the cake.

8. Cool completely before icing.
