Recipe Ingredients

  • 1 cup cooked bulgur,
  • 1 cup canned chickpeas (drained and rinsed)
  • 1½ cups halved cherry tomatoes
  • 1½ cups diced cucumber
  • 2 tbsp chopped spring onions
  • small handful each of finely chopped parsley and mint,
  • juice of 1 lemon
  • 2 tsp red-wine vinegar
  • extra-virgin olive oil
  • salt and pepper

Recipe Directions

Mix together 1 cup cooked bulgur, 1 cup canned chickpeas (drained and rinsed), 1½ cups halved cherry tomatoes, 1½ cups diced cucumber, 2 tbsp chopped spring onions, a small handful each of finely chopped parsley and mint, juice of 1 lemon, 2 tsp red-wine vinegar and a drizzle of extra-virgin olive oil. Season with salt and pepper to taste.
