- 1 tbsp olive oil
- 1 tbsp brown sugar
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 boneless beef tri-tip (sirloin) roast (about 1kg)
- Heat grill on medium.
- In a small bowl, combine oil, sugar, cumin, paprika, garlic powder, onion powder, 2 tsp salt and ó tsp pepper. Rub all over beef, which can be wrapped in plastic and refrigerated for up to 1 day.
- Grill beef for 30 minutes or until 50°C on a meat thermometer, turning over 3 times. Transfer to a cutting board; let it rest for at least 10 minutes. Thinly slice against grain to serve.
