8 sweetcorn coblets or 4
sweetcorn cobs cut in half
juice of 2 limes
3 ripe avocados, sliced
few drops Tabasco sauce
1 tbsp agave nectar or
salt and freshly ground
3 little gem lettuces,
3 spring onions, finely
1. Carve off shards of the kernels from the sweetcorn cobs. Set aside.
2. Sprinkle half the lime juice over the avocado slices to stop them going brown.
3. Put the remaining lime juice, Tabasco sauce and agave nectar or honey in a small bowl. Whisk to combine and season well. Assemble the salad, layering up all the ingredients in a wide, shallow bowl.
GH TIP Add the Tabasco sauce to taste, one drop at a time, as it packs a spicy punch!
