Recipe Ingredients

Pearl Thusi is an actress, radio host and cohost of MTV Base’s Lip Sync Battle Africa. She has appeared in three films – Rosa 2, Tremors 5 and Kalushi – and is due to appear in an international film, The Blue Mauritius.

Pastry

  • 2 tbsp butter
  • 2 tbsp sugar
  • 1 egg
  • ¾ cup self-raising flour
  • pinch of salt

Filling

  • 2 cups milk
  • 2 eggs, separated
  • ½ cup sugar
  • ¼ cup cake flour
  • ¼ cup cornflour
  • pinch of salt
  • 2 tbsp butter
  • 1 tsp vanilla essence
  • ground cinnamon

 

Recipe Directions

1. Preheat oven to 180°C.

2. Blitz all the pastry ingredients together in a food processor or with an electric beater until they all clump together to form a dough.

3. Press into a lightly greased 24cm tart dish. Chill in the fridge while preparing the filling.

4. Heat the milk in a medium pot. (Do not boil.)

5. Beat the egg yolks and sugar until creamy and light, then add the flours and salt. The mixture will be quite thick.

6. Add some warm milk to the egg mixture and then return all of it to the pot.

7. Bring to the boil and whisk constantly until thickened.

8. Remove from the heat and whisk in the butter and vanilla essence.

9. Whisk the egg whites in a clean bowl until soft peaks form. Fold into the custard.

10. Pour into the chilled pastry case and sprinkle with cinnamon.

11. Bake for about 30 minutes.
