Pork Fillet with Melon Salsa

Recipe Ingredients

  • 1 pork fillet (600g)
  • 1 tbsp butter
  • 1/4 tsp salt
  • 2 cups cantaloupe (spanspek)
  • 1/4 cup  fresh coriander
  • 1/4 cup orange segments
  • 2tbsp lime juice
  • 1/2 tsp chilli powder
  • 1/4 tsp salt

Recipe Directions

  1. On a baking tray, brush 1 pork fillet (600g) with 1 tbsp melted butter and season with ¼ tsp salt.
  2. Roast for 20 minutes or until cooked. Combine 2 cups finely chopped spanspek, ¼ cup packed fresh coriander, finely chopped, ¼ cup chopped orange segments, 2 tbsp lime juice, ½ tsp chilli powder and ¼ tsp salt.
  3. Slice pork and serve over mixed greens topped with melon salsa.
EACH SERVING About 900kJ, 28g protein, 10g carbohydrate, 7g fat (3g saturated), 1g fibre.
