Veg Trio on Sweet Mash

Recipe Ingredients

  • 4 large sweet potatoes
  • 85g Greek Yoghurt
  • 2 tbsp butter
  • 340g sweet peppers
  • 3 cloves garlic
  • ½ tsp salt
  • 425g  canned pinto beans
  • 1 tbsp lemon juice
  • 1 tbsp Worcester Sauce
  • ½ tsp black pepper
  • ¼ cup sunflower seeds

Recipe Directions

  1. To a large pot of salted water, add 4 large sweet potatoes, peeled and cut into 2,5 cm chunks. Cover partially; heat to boiling on high. Reduce heat to medium. Simmer for 10 minutes or until tender; drain.
  2. Mash with 85g Greek Yoghurt and 2 tbsp butter. In another large pot, heat 1 tbsp olive oil on medium. Add 1 bunch kale, chopped; 340g sweet peppers, sliced; 3 cloves garlic, chopped and ½ tsp salt.
  3. Cook for 10 minutes, stirring. Add 425g canned pinto beans, drained; 1 tbsp lemon juice; 1 tbsp Worcester Sauce; and ½ tsp black pepper. Cook for 1 minute.  Serve over mash; top with ¼ cup sunflower seeds.
