Watermelon Salad with Wheat Berries, Edamame & Feta Cheese

Recipe Ingredients

  • 6 cups diced watermelon
  • 2 cups cooked wheat berries (available at health shops)
  • cooked barley
  • 2 cups boiled edamame
  • pinch of chopped mint
  • 3 tbsp crumbled feta cheese
  • 3 tbsp grated red onion
  • 1½ tbsp extra-virgin olive oil
  • 2 tsp balsamic vinegar
  • salt and pepper

Recipe Directions

Toss 6 cups diced watermelon and 2 cups cooked wheat berries (available at health shops) or cooked barley with 2 cups boiled edamame, a pinch of chopped mint, 3 tbsp crumbled feta cheese, 3 tbsp grated red onion, 1½ tbsp extra-virgin olive oil, 2 tsp balsamic vinegar, and salt and pepper to taste. Divide between 2 bowls.
