Whole-wheat Penne with Vegetables & Ricotta Salata

Recipe Ingredients

  • 3 cups:

- mixed diced baby marrows

- patty pans and

- red bell pepper

 

  • 2 tbsp extra-virgin olive oil
  • 2 smashed garlic cloves
  • pinch of red chilli flakes
  • salt and pepper
  • 2 cups cooked whole-wheat penne
  • chopped basil
  • crumbled ricotta cheese

Recipe Directions

Sauté 3 cups mixed diced baby marrows, patty pans and red bell pepper with 2 tbsp extra-virgin olive oil, 2 smashed garlic cloves, a pinch of red chilli flakes, and salt and pepper to taste in a small frying pan until tender (6 to 8 minutes). Toss with 2 cups cooked whole-wheat penne and chopped basil. Serve with crumbled ricotta cheese.
