Apples baked in the microwave

This low-kilojoule dessert is simply delicious

Ingredients

  • 4 small apples
  • 1 tsp sugar
  • ⅛ tsp ground allspice
  • ⅛ tsp ground nutmeg
  • 8 tsp dried cranberries
  • 4 tsp water
  • 2 tsp light vegetable spread
  • 8 tsp chopped walnuts
 

Directions

  1. Cut off top 1cm from each apple. With a melon baller, core through stem ends without breaking through bottom.
  2. Place in a glass pie plate; sprinkle with sugar and spices. Divide cranberries, water and vegetable spread among cavities and tops of apples.
  3. Cover; microwave on medium-high (70% power) for 8 minutes or until tender. Let stand, covered, for 3 minutes. Top with walnuts.

Each Serving About 607kJ, 2g protein, 27g carbohydrate, 5g total fat (1g saturated), 4g fibre, 0mg cholesterol, 20mg sodium.
