Spray the base of a medium-sized pot with cooking spray. Cook 250ml sliced leeks on medium for 2 minutes, stirring.
Add 1½ cups peas, 125ml white wine and 60ml water. Bring to the boil, then reduce heat. Simmer for 5 to 6 minutes or until reduced by half.
Meanwhile, spray a large nonstick pan with cooking spray and heat on medium. Sprinkle 4 skinless salmon fillets with ¼ tsp salt. Cook for 10 minutes or until opaque in centre, turning once.
While fish cooks, purée pea mixture in a blender with ¼ tsp salt and ¼ tsp pepper. Serve with salmon.
