Be a bigger beetroot-eater

Beetroot is packed with cancer-fighting antioxidants and folate, which everyone needs but is especially important for pregnant women, says registered dietitian, Chrissy Carroll

 

 

Try these healthy, fuss-free recipes by Marygrace Taylor:

Prep them, Mess-free

Roast beetroot for 1 hour at 200°C, then slip off the skin and slice the beetroot. (Wear gloves if you don’t want to stain your hands.) Even easier: buy the beetroot precooked.

 

Make them the Star

Whisk together 3 tbsp orange juice, 2 tbsp olive oil, 1 tsp orange zest, and ½ tsp Dijon mustard. Drizzle over 4 medium roasted, sliced beetroot. Or make a sandwich with sliced beetroot, hummus, goats’-milk cheese and spinach on whole-wheat bread
