Store sugar in a resealable bag in the freezer to stop it from hardening; thaw for 10 minutes before use.
Freeze milk in its container; thaw it for a few days in the fridge.
Chop a bunch in the food processor, then mix with a teaspoon or two of olive oil. Put in a resealable bag – removing all the air – and freeze so the mixture lies flat. Break off pieces to season soups and sauces.
Double-wrap in plastic and use later to flavour soups and stews.
