Vicki says:

 

If you’re saving a batch of egg white for using in meringues or soufflé, don’t cover the bowl in cling film.

You need whatever water naturally occurs in eggs to evaporate, otherwise your meringues or soufflés are likely to flop – or at least not rise like they should.
