3 quick saves for cooking mishaps
• Lumpy gravy can be saved! First set to work with a whisk – if that doesn’t help, push through a fine-meshed sieve with a spatula and, as a last resort, take a hand-held blender to it
• For chicken or meat that’s cooked too quickly on the outside and is still raw on the inside: transfer to a hot oven (180ºC is good) to roast. The indirect heat will continue the cooking without further browning the meat.
• If a fruit piecrust has cracked fix it by brushing the dough with iced water. Sprinkle generously with granulated sugar and press gently so the crystals adhere, then bake.
