Westfalia Avocado Oil is a great choice for culinary use. Avocado oil is a healthier cooking option, not only because it is naturally cholesterol-free and rich in omega-3 fatty acids, but also because of its high smoke point of 250˚C, which means it can be safely used for cooking, baking, drizzling, dipping, roasting and frying! This California quinoa bowl is filled with antioxidants, protein, fibre and healthy fats, so it’s the perfect summer salad to whip up anytime. We used the Westfalia Lemon Flavoured Avocado Oil, but one can substitute this with any of the other flavours available in the Westfalia range.

 

California quinoa bowl

Ingredients:

1 cup organic white quinoa

12 cup black lentils

1 large fennel bulb, halved, cored and thinly sliced

4 green onions, split lengthwise and cut into 7cm strips

1-2 small mangoes, peeled and thinly sliced

1 large avocado, thinly sliced

100g feta cheese

2 cups strawberries, chopped

1 cup mixed sprouts

14 cup sunflower seeds

 

Citrus avocado oil dressing:

2 tablespoons apple-cider vinegar

2 teaspoons mustard

1 tablespoon of your favourite jam

12 teaspoon sea salt

23 cup Westfalia Lemon Flavoured Avocado Oil 

Freshly ground black pepper

 

Directions:

Cook the quinoa and lentils in two separate small pots of boiling salted water until they are both al dente, about 15 to 20 minutes. The quinoa will cook slightly faster. Rinse under cold water and drain. Spread both out onto a plate and refrigerate. Meanwhile, combine the vinegar, mustard, jam and salt, and mix until smooth. Slowly drizzle in the Westfalia Lemon Flavoured Avocado Oil until mostly incorporated. Season with a generous amount of freshly cracked black pepper. Taste and adjust seasoning if necessary. In a large mixing bowl, combine the quinoa, lentils, sliced fennel, avocado slices, green onions and mangoes. Add half of the dressing and toss to distribute evenly. Fold in the crumbled feta and chopped strawberries, and pour in the remaining dressing. Lightly toss to mix through. Transfer to bowls or a large serving dish. Serve salad topped with sprouts and sunflower seeds and enjoy immediately.
