Fabulous Frittata

 

 

Take a regular, well-seasoned scrambled-egg mix (we used five eggs and 50ml milk) and add to a pan of lightly sautéed spinach. Allow to cook on the stove on a low heat for 15 minutes, then add crumbled ricotta, feta or mozzarella. Finish off under the grill for five minutes, and turn out onto a plate and slice.

TIP Make mini frittatas in a muffin pan and use for lunchboxes for the whole family.
