Take a taste trip to the tropics

This fruit’s sweet, summery flavour is perfect in smoothies and salads.




  • 125g chopped fresh pineapple
  • 30ml white-wine vinegar
  • 1/8 tsp crushed red pepper

a pinch each of salt and pepper

60ml extra virgin olive oil

475g chopped fresh pineapple

150g rocket leaves

2 cos lettuce hearts, chopped

6 slices cooked and crumbled bacon



  1. Blend together chopped pineapple, whitewine vinegar, red pepper and salt and pepper until smooth.
  2. Slowly drizzle in extra virgin olive oil.
  3. Toss with chopped fresh pineapple, rocket leaves and cos lettuce hearts.
  4. Top with crumbled bacon.
  5. Serve with grilled chicken.
