9 delicious recipes for Christmas leftovers

If your fridge is overflowing with leftovers, try these quick, clever recipes

Turkey

Turkey Tacos: Combine sweetcorn, chopped tomatoes and shredded turkey. Serve in taco shells.

Oriental fry: Sauté a teaspoon each of chopped ginger and garlic in a tablespoon of oil. Add a bag of frozen vegetables; cook for 5 minutes. Stir in shredded chicken and add a dash of soya sauce

Spicy pitas: Mix curry powder, light mayonnaise, chopped celery and shredded chicken. Serve in lightly toasted pita bread.

Cheesy turkey quesadillas: In a pan, fry chopped turkey, red pepper and chilli flakes. Place one tortilla in a clean nonstick pan, sprinkle turkey mix and grated mozzarella cheese across half of the tortilla. Cook over medium heat, then flip uncovered half of tortilla on top of mixture. Flip to heat this side, then serve.

Rice

Hearty soup: Stir rice into chicken soup with baby spinach. Top with grated Parmesan.

Supper hash: Sauté rice with chopped spring onions; peas; and any leftover meat from your Christmas roast, chopped.

Nutty breakfast bowl: Heat rice then top with honey and nuts for a morning meal.

Christmas pudding

Fruity strudel: Spread crumbled Christmas pudding onto a rolled-out sheet of puff pastry. Roll it up, like a Swiss roll. Brush the top with butter and bake at 180 °C for about 20 minutes until golden. Dust with icing sugar and serve slices.

Dreamy ice cream: Whizz ice cream in a fruit processor until smooth. Add crumbled Christmas pud and stir gently. Freeze for about two hours. Serve topped with Amarula.
