Berry-sangria ice-lollies recipe

Whether you want to drink it or cook with it, Two Oceans has the perfect shiraz for you

The alcoholic ice-lollies trend is big right now. We’ve seen everything from gin-and-tonic lollies to sparkling-wine lollies, and now you can try sangria ice lollies! Here is a great recipe using Two Oceans Shiraz.

Berry-sangria ice-lollies recipe  

Makes: 24 | Preparation Time: 25 minutes

Ingredients:

  • 500ml Two Oceans Shiraz
  • 250ml berry juice
  • 60ml sugar
  • zest of 2 oranges
  • 1 cinnamon stick
  • 3 star anise
  • 4 cloves
  • 150g raspberries, halved
  • 100g blueberries
  • handful of mint leaves, chopped

You will also need:

  • moulds for 24 ice lollies
  • 24 ice-lolly sticks

 

Method:

1. Place the Two Oceans shiraz, berry juice, sugar, zest, cinnamon stick, star anise and cloves in a medium pot.

2. Heat gently on the stove until sugar dissolves.

3. Bring to the boil and then turn heat down and simmer gently for 10 minutes to cook the alcohol out. Allow to cool to room temperature.

4. Pour through a sieve into a jug. Discard the zest, star anise, cinnamon and cloves.

5. Fill each of the ice-lolly moulds with a few berries and chopped mint. Do not overfill with berries.

6. Pour the liquid into the moulds.

7. Place mould sticks into the filled moulds and freeze for 6 hours. Alternatively, freeze for 1 hour, then add wooden lolly sticks and continue freezing until set (about another 4 to 5 hours).

The best time to enjoy Two Oceans Shiraz is on a hot summer’s day!

 

The grapes to make this rich red wine are sourced from South African vineyards in and around areas such as Stellenbosch, the Helderberg, Malmesbury and Durbanville.

The extraction of the grapes used for this wine was carefully monitored to give that vibrant red colour. This shiraz was racked onto French and American oak, where it matured for three months.

Two Oceans Shiraz has complex aromas of red berries with cloves and spice, vanilla and hints of white pepper. These lovely flavours leave you with a lingering smooth taste. This wine is great to drink on its own and is also perfect paired with grilled lamb, a warm stew or spicy brisket.
