2. The Ultimate Cheeseburger

The Ultimate Cheeseburger A recipe youíll turn to time and time again. Succulent and simple. Hands-on time 20min, plus optional chilling. Cooking time about 20min. Serves 4 for the burgers N 500g (1lb 2oz) good-quality steak mince N 1?2 a small onion, finely chopped N 1 medium egg N 1?2tbsp Dijon mustard N 100g (31?2oz) fresh white breadcrumbs N 2tbsp sunflower oil N 8 Cheddar cheese slices to serve N 4 sesame burger buns N Gem lettuce leaves, optional N Tomato slices, optional N Gherkin spears, optional

4. Broccoli & Blue-cheese Soup

Midweek supper in the 30 minutes BROCCOLI AND BLUE CHEESE SOUP Also works well with cauliflower. Serves 4 ? 1tbsp extra virgin olive oil, plus extra to drizzle ? 1 large onion, roughly chopped ? 1 large potato, about 275g (10oz), roughly chopped ? 1?2tsp dried chilli flakes, plus extra to garnish ? 3 sprigs fresh thyme, leaves picked ? 2 garlic cloves, roughly chopped ? 450g (1lb) broccoli, cut into florets ? 1 litre (13?4 pint) strong vegetable stock ? 50g (2oz) Stilton, crumbled 1 Heat the oil in a large pan and gently fry the onion and potato for 10min until softened. Add the chilli, thyme and garlic and cook for 1min before adding the broccoli and stock. 2 Bring up to the boil, then simmer for 5min until the vegetables are softened. Carefully blend the soup until completely smooth, check the seasoning. 3 Divide among four warmed soup bowls and top with crumbled Stilton, a drizzle of oil and a sprinkle of chilli flakes. Serve with crusty bread. PER SERVING 199cals, 10g protein, 9g fat (4g saturates), 16g carbs (4g sugars), 6g fibre
