The Queen’s private chef reveals her favourite dish

Buckingham Palace head chef Mark Flanagan was tasked with creating an all British menu with the wow-factor for the Duke and Duchess of Sussex’s recent Windsor Castle nuptials, but the Queen’s personal chef has revealed his boss has more humble tastes. Speaking to British TV channel ITV for a new two-part documentary, Queen of the World, Flanagan says the Monarch is so taken with spicy Caribbean soup, callaloo, he’s been asked to cook the dish more regularly.

The Queen fell in love with the fiery soup when a group from the Caribbean commandeered the Palace kitchens last year to give the Queen and the Duke of Edinburgh ‘a little idea of what we eat at home’. The callaloo was, he says, ‘an absolute sensation’ and quickly became a menu mainstay. ‘I had email after email telling me that it must now feature more regularly,’ Flanagan said. ITV was granted intimate year-long access to the Queen, her staff and younger members of the royal family, including Duchesses Kate and Meghan, for the documentary.

Queen of the World celebrates the 92-year-old’s unique role as Head of the Commonwealth and the affection she has for all 53 member nations — something that she hopes to pass on to her grandchildren. And the documentary is brimming with special moments. In one clip, Her Majesty is left in a fit of giggles when the recording of her 2017 Christmas speech is interrupted by birds chirping in the Palace garden.

The new Duchess of Sussex, Meghan Markle, is also reunited with her wedding dress in another clip. She reveals she didn’t see her 5-metre lace veil — hand embroidered with flowers from all 53 Commonwealth nations — until the morning of her wedding, trusting Givenchy’s Creative Director, Clare Waight Keller, to get the design just right. ‘We knew we wanted it to be very delicate, but then after that point, I just said I trust her implicitly with what she did, and I didn’t see it really until the morning of, so this is my first time seeing the veil like this.’
